We Do Gin Differently

 

OUR FAIRWILD JUNIPER

We pride ourselves in sourcing the highest quality botanicals and working with suppliers who harvest in sustainable ways.

Our organic juniper comes from the Białowieża Forest, a UNESCO World Heritage site and one of the last standing primeval forests in Europe.

It’s wild-harvested by local collectors and certified by the FairWild Foundation, which ensures plants are collected at a sustainable level and workers are paid fairly and treated with respect.

OUR CORN-BASED NEUTRAL SPIRIT

The only gin in the UK, we use corn-based neutral spirit to create the base of the Rabbit Gin. Corn spirit creates a silky smooth, buttery texture that beautifully balances the spiciness and warmth of the Sichuan green pepper and other warming botanicals in GIN01 – The Rabbit.

You can distinguish the quality of our premium corn spirit by the notes of butterscotch, popcorn and corn bread on the nose and palate.

SERVE THE SPIRIT

 

The final version of the Rabbit Gin was created with the guidance of Erik Lorincz, former Head Bartender of the American Bar at the Savoy Hotel and owner of Mayfair’s cocktail bar Kwānt, and his fantastic team member and bartender Rasty Kasar. Kwānt won No. 6 in the list of ‘The World’s 50 Best Bars’ in 2020.

Our three perfect serves were crafted by the masterminds behind Two One Four, our local Bermondsey cocktail bar that offers over 100 gins. Two One Four is also the home to Bermondsey Tonic, Europe’s first Tonic water made from raw and natural quinine.

Co-founder Lawrence Mason and bar manager Antim Solakov were inspired by the ‘bold’, ‘curious’ and ‘lively’ characteristics of The Rabbit Spirit. Explore them in these delicious and easy to make cocktails.

Add 1 part of dry vermouth and 3 parts of GIN01 – The Rabbit in a mixing glass with plenty of ice and mix until ice cold. Strain and serve up in a chilled cocktail glass with a twist of lemon, snapped gently over the liquid so as to release the oils.

Mix 2 parts of GIN01 – The Rabbit over ice in a highball glass and top with Bermondsey Grapefruit Tonic, about 6 parts. Finish with a dry or fresh grapefruit wheel. Add a few crushed Sichuan green peppercorns if you’re feeling extra curious.

Mix 8 mint leaves, 2 parts of GIN01 – The Rabbit, 1 part of freshly squeezed lime juice and 0.5 part of sugar syrup over ice in a shaker. Shake hard and fine strain into a tall glass. Top with champagne and finish with a couple of mint leaves.
